210g tepung superfine/halus -diayak bersama baking powder<br />
1 sudu teh baking powder<br />
1 sudu teh cream of tartar<br />
200g gula caster (<span style="color: red;">tp akak guna 170g aje</span>) - asingkan 2 sudu besar utk dipukul bersama putih telur<br />
250g mentega<br />
5 biji telur gred A- asingkan putih dan kuningnya<br />
1 sudu kecil esen vanilla<br />
emulco coklat<i> </i>atau serbuk koko<i><br />

Cara membuat:<br />
<br />
Panaskan oven pd suhu 160 C atau suhu mengikut oven (suhu oven akak hanya 150C)<br />
Pukul mentega dengan gula sehingga kembang/putih<br />
Masukkan telur kuning sebiji demi sebiji dan pukul sehingga sebati (jgn terlampau lama nanti kek jd kering, sekadar rata sahaja)<br />
Dalam mangkuk lain yg kering dan bebas dari sebarang minyak, pukul putih telur sehingga berbuih kemudian masukkan gula yg diasingkan tadi dan cream of tartar. Pukul hingga bertanduk.(bila diterbalikkan putih telur tidak jatuh)<br />
Dalam mangkuk campuran butter tadi, masukkan tepung sedikit demi sedikit diselang selikan dgn campuran telur putih, kaup balik sehingga sekata. Ulang hingga habis.<br />
Bahagikan kpd 2 bahagian, 1 bahagian dimasukkan emulco coklat.<br />
Masukkan adunan ke dlm loyang secara berselang-seli. Akhir sekali ambil lidi sate lorekkan permukaan atasnya.<br />
Bakar dalam ketuhar 40-50 minit atau sehingga masak.

Cuci ikan dan lumur dgn garam kunyit kemudian goreng hingga masak, jgn terlampau garing. Ketepikan.<br />
Masukkan semua bahan A ke dalam food processor. Kisar kasar.<br />
Panaskan minyak di dalam kuali. Tumis semua bahan kisar hingga naik bau dan naik minyak. <br />
Masukkan sedikit air (jgn terlampau byk) cuma taknak jd terlampau kering.<br />
Masukkan kiub ikan bilis dan garam secukup rasa. Kacau rata<br />

Masukkan cream of tartar dan 60g gula sedikit demi sedikit sambil dipukul sehingga bertanduk dan kaku (bila diterbalikkan bekas, putih telur tidak jatuh/mengalir). <span style="color: red;">Penting semasa asingkan telur putih tiada sebarang telur kuning didalamnya dan tiada kesan minyak pada bekas/alatan yg digunakan utk mendptkan keadaan bertanduk dan kaku.</span></span></span><br />

1. Panaskan oven pada suhu 160C. Bakar base biskut untuk 5 minit,
kemudian sejukkan pada suhu bilik. (kalau base biskut menggelembung
sedikit, ratakan balik dengan belakang sudu).
2. Dalam bekas besar, pukul cream cheese bersama 30g gula,
perlahan-lahan masukkan whipping cream dan esen vanila serta jus lemon.
Pukul sampai adunan jadi sebati, smooth dan gebu. Guna speed sederhana
(ku guna whisk telur je).
2. Masukkan kuning telur satu per satu dan pukul sebati, sambil berhenti
sekali-sekala untuk scrap tepi-tepi bekas tersebut.
3. Dalam bekas lain, pukul putih telur hingga berbuih. Masukkan cream of
tartar dan baki 30g gula sedikit demi sedikit, hingga bertanduk dan
kaku (bila terbalikkan bekas, putih telur tak mengalir atau jatuh.
Pastikan tiada walaupun secubit/setitik pun kuning telur atau minyak
dalam putih telur sebelum memukul. Kalau tak 'meringue'- nama putih
telur yang dipukul kaku ini- tak jadi. Kalau ada sedikit kuning telur,
boleh dibuang dengan sudu).
4. Ambil satu senduk meringue dan kaup balikkan ke dalam adunan cream
cheese (stage ini boleh kasar sikit sampai tak nampak jalur/streaks
putih telur). Ambil lagi sesenduk dua meringue dan kaup balikkan
perlahan-lahan dalam adunan cream cheese. Buat dalam 3-4 kali.

1. Panaskan oven pada suhu 160C. Bakar base biskut untuk 5 minit,
kemudian sejukkan pada suhu bilik. (kalau base biskut menggelembung
sedikit, ratakan balik dengan belakang sudu).
2. Dalam bekas besar, pukul cream cheese bersama 30g gula,
perlahan-lahan masukkan whipping cream dan esen vanila serta jus lemon.
Pukul sampai adunan jadi sebati, smooth dan gebu. Guna speed sederhana
(ku guna whisk telur je).
2. Masukkan kuning telur satu per satu dan pukul sebati, sambil berhenti
sekali-sekala untuk scrap tepi-tepi bekas tersebut.
3. Dalam bekas lain, pukul putih telur hingga berbuih. Masukkan cream of
tartar dan baki 30g gula sedikit demi sedikit, hingga bertanduk dan
kaku (bila terbalikkan bekas, putih telur tak mengalir atau jatuh.
Pastikan tiada walaupun secubit/setitik pun kuning telur atau minyak
dalam putih telur sebelum memukul. Kalau tak 'meringue'- nama putih
telur yang dipukul kaku ini- tak jadi. Kalau ada sedikit kuning telur,
boleh dibuang dengan sudu).
4. Ambil satu senduk meringue dan kaup balikkan ke dalam adunan cream
cheese (stage ini boleh kasar sikit sampai tak nampak jalur/streaks
putih telur). Ambil lagi sesenduk dua meringue dan kaup balikkan
perlahan-lahan dalam adunan cream cheese. Buat dalam 3-4 kali.
5. Tuangkan adunan ke dalam loyang berisi base biskut dan hentak loyang
sekali atas meja (hentak dari paras siku) untuk keluarkan buih-buih yang
besar (kalau tak nanti nampak lubang-lubang di atas atau di dalam kek
bila sudah masak)
6. Balut luar loyang cheesecake dengan aluminium foil 2-3 kali dan bakar
secara bain marie/water bath/steam bake (loyang kek diletakkan dalam
loyang lebih besar, isikan air panas dalam loyang besar hingga mencecah
separuh ketinggian loyang kek tersebut. Tak perlu banyak sangat, asalkan
loyang kek tu boleh bergoyang sikit oklah) untuk 1 jam (ku buat 55
minit, dengan 5 minit terakhir loyang di'rotate'kan)
7. Keluarkan dari oven dan sejukkan dalam loyang sebentar di atas redai,
sebelum dikeluarkan cheesecake dan disimpan dalam peti sejuk. Dah sejuk
hiaskan sesuka hati atau tuangkan blueberry filling di atasnya.

1/2 sudu kecil esen vanilla<br />

Panaskan oven pd suhu 160 C. (ikut kesesuaian oven masing-masing) - <span style="color: red;">oven akak hanya 150C</span><br />
Pukul mentega dengan gula perang sehingga kembang/putih<br />
Masukkan telur sebiji demi sebiji dan pukul sehingga sebati.<br />
Kemudian masukkan madu dan esen vanilla. Pukul hingga sebati.<br />
Sementara itu ayak tepung serbaguna dengan serbuk penaik, serbuk kayu manis dan susu tepung.<br />
Ambil 2 sudu besar tepung yg diayak tadi dan gaulkan dengan buahan campuran untuk mengelakkan buah dari mendap ke dasar kek. <br />
Masukkan tepung sedikit demi sedikit dan kaup balik sehingga sekata.<br />
Kemudian masukkan buahan kering, gaul rata.<br />
Masukkan adunan ke dlm loyang bersaiz 8 inci.<br />
Bakar dalam ketuhar selama 35-45 minit atau sehingga masak.<br />
Jangan terlebih bakar nanti kek akan menjadi kering.<br />
Selepas 35 minit, cucuk dengan lidi sate jika keluar licin maksudnya kek dah masak bolehlah diangkat dan sejukkan atas redai.<br />

Cara membuat:

Campurkan kuning telur, putih telur, garam halus esen vanilla dan pewarna kuning dlm mangkuk kecil, pukul sket.

Dalam mangkuk besar, gaul kan mentega, gula, tepung gandum dan tepung jagung hingga menjadi
serbuk roti kemudian masukkan campuran telur tadi. Gaul sebati. Masukkan
dlm acuan tat gulung, picit dan letak kan jem kemudian gulung.

Sapu atasnya dgn bahan sapuan kemudian bakar pd suhu 160C selama 20 min
atau sehingga masak (suhu dan masa bergantung kpd jenis oven)

Semalam buat roti ni, resepi sumbangan <span style="color: red;">Azie Surip dari Kelab Roti</span>. Memang tak rugi mencuba, sedap lembut dan terasa kekacang bila mengunyah ni. Bau roti ni pun harum mungkin sbb buah2an kering dan kekacang walnut dan sunflower seed didlmnya membuatkan ianya bau harum. Resepi akak CnP disini utk rujukan dimasa hadapan. <u><b>Dried Fruit & Nut Bread (Resepi sumbangan Azie Surip - Kelab Roti)</b></u><br />

{ Ingredients}<br />

3 cups of bread flour<br />
3 tablespoons granulated sugar<br />
3/4 teaspoon salt<br />
3 1/2 teaspoons instant yeast<br />
1 1/5 tablespoons lemon extract<br />
2 large eggs<br />
1/2 cup of buttermilk, at room temperature<br />
2 tablespoons unsalted butter, melted<br />
1/4 cup of water, at room temperature<br />
1 cup dried sweetened cranberries<br />
1/4 cup golden raisins<br />
1/4 cup dried currants<br />
3/4 cup coarsely chopped walnuts<br />
1/4 cup sunflower seeds<br />
1/4 rolled oats<br />
<br />
{ To Make the Bread }<br />
<br />
In the bowl of an electric mixer fitted with a paddle attachment,
combine all of the ingredients (except the dried fruits and nuts) to
make a soft dough. Switch the attachment to a dough kneading hook and
knead for 5 minutes.<br />
The dough should clear the sides of the
mixing bowl, but remain tacky to the bottom. Adjust the concentrations
of water and flour so that the dough takes this form.<br />
Add the cranberries, raisins, and currants and continue to knead by hand for an additional 2 minutes.<br />
Then add the chopped walnuts, sunflower seeds, oats and knead by hand until the ingredients are evenly distributed.<br />
Transfer the dough to a well oiled bowl and allow to ferment,
uncovered, at room temperature for 2 hours. The dough should almost
double in size!<br />
Transfer the dough a counter top surface and
divide into 6 pieces; 3 larger pieces and 3 smaller pieces. Roll out all
6 pieces by hand into long strands. Braid the 3 larger strands using
the 3-braid technique and then do the same with the 3 smaller strands.<br />
Place the large braid on a baking sheet lined with parchment paper and
then place the smaller braid directly on top of it. Brush the entire
bread with an egg wash (1 egg beaten with 1 tablespoon milk) and allow
to sit at room temperature for another 2 hours.<br />
The braided bread should double in size. Brush the entire bread with egg wash a second time.<br />
Bake at 325 degrees for approximately 25 minutes, or until golden brown
on top. Remove from oven and allow to cool completely before serving.<br />

Kemudian masukkan butter dan uli hingga elastik (sehingga doh boleh ditarik nipis spt membuat roti canai)<br />
Perap 1 jam atau sehingga saiz berganda.<br />
Kemudian tumbukkan doh untuk buang angin</span></span></span><br />

<strong>Cara penyediaan:</strong><br />
<br />
1. Besrsihkan Ayam yang telah dipotong dan perlu disimpan dalam
penapis bersesuain untuk keringkan air basuhan ayam. Masukan kedalam
bekas dan masukan serbuk kunyit dan sedikit garam dan gaulkan serata
ketulan ayam didalam bekas. Kunyit mengandungi bahan antiseptik yang
baik untuk membunuh bakteria yang terdapat didaging ayam .Masukkan
serbuk kari, kisaran bawang+bawang putih+ dan halia. Tutup bekas ayam
ini dengan plastik salut “plastic wraper” dan Peramkan di peti sejuk
bahagian dingin selama 1- 2 jam untuk bahan rempah ini masuk kedalam isi
ayam.<br />
2. Keluarkan bekas dan masukkan Tepung Ubikayu, T.beras dan T.jagung
bersama serbuk lada putih dan daun kari yang dipotong halus.Gaulkan
serata dan dapatkan kelikatan tepung yang tepat.Sekiranya tepung terlalu
likat boleh ditambah telur sebutir atau sedikit air. Kelikatan tepung
adalah amat perlu diberi perhatian sekiranya cair tepung ini akan
berpisah dari dari ketulan ayam..terlalu pekat ia akan menjadi cucur
goreng. Maka dinasihatkan agar goreng seketul ayam dahulu untuk pastikan
bentuk fizikal ketulan <span class="skimlinks-unlinked">ayam.Peram</span> 20-30 minit sebelum gorengan.<br />
3. Panaskan kuali dan masukkan minyak yang secukup ( ketulan ayam
perlu lemas dalam minyak). Tentukan minyak perlu panas sebelum memulakan
goringan. suhu minyak amat memainkan peranan dalam gorengan yang
cantik.<br />
4. Untuk gorengan yang cantik ketulan ayam perlu dimasukan jangan
terlalu banyak dan sedikit. Ap dapur perlulah sentia diawasi supaya
ketulan ayam tidak hangus. pada keadaan biasa cuma masukkan 4 ketul
dalam kuali yang sederhana besar pada api sederhana.Goringan ini
biasanya ambil masa 20- 25 minit. Untuk pastikan ketulan ayam telah
masak biasanya ketulan itu mula terapung. Masukan bahagian peha diakhir
gorengan kerana bahagian peha ambil masa yang lama untuk masak dan
memerlukan api yang kecil. Tanda peha sudah dimasak ialah dengan
perhatikan urat pada bahagian bawah mula pecah dan ketulan mula
terapong.<br />

<br />
<br /> 1. Panaskan susu cair dengan gula. Kecilkan api.
<br /> 2. Bancuh tepung kastard dengan semangkuk air sejuk. Masukkan
bancuhan tadi ke dalam susu cair yang sedang mendidih, Masak hingga
betul-betul pekat dan kastard pekat. Tutup api.
<br /> 3. Di dalam bekas berasingan, susunkan kek gulung sehingga habis. Kemudian, basahkan dengan air buah-buahan tin.
<br /> 4. Masukkan buah-buahan tin hingga habis.-guna 1/3 buah2 shj
<br /> 5. Tuangkan bancuhan kastard ke atas susunan buah-buahan tadi.
<br /> 6. Untuk jeli, larutkan jeli bersama semangkuk air panas. Kacau hingga sebati.
<br /> 7. Akhir sekali, tuangkan jeli tersebut di atas kastard dan sejukkan. Bila betul-betul keras, bolehlah dihidangkan.
